Sweet potato/yam french fries

Last night I decided to make my first batch of sweet potato oven baked fries. They turned out alright, not as crispy as I'd like them to be. Maybe someone else has perfected this recipe and/or has some other ideas for my yams. The recipe I used is as follows:

1 large sweet potato
EVOO
Ground black pepper
Taco seasoning

Rubbed the EVOO onto the potato wedges, peppered/taco seasoned to taste.
Preheated oven to 400 degrees.
Placed 'thick-cut' fries on a baking pan, single layer.
Baked for 35 mins.

They tasted pretty good, but weren't the right consistency for my liking. As they could have been a little more crispy...any suggestions are greatly appreciated.

Oven crispy sweet potatoe fries

-Cooking Spray
-2 large sweet potatoes, scrubbed, about 1 1/2 pounds
-1-2 large egg white(s)
-Your choice of seasoning. I use a creole pepper blend and Lawrys seasoned salt.

Preheat the oven to 425 degrees F and grease a large non-stick baking sheet with the cooking spray (be generous with the spray).

Pat the potatoes dry and slice lengthwise into 1/2-inch thick slices. Turn each slice flat and slice again lengthwise into even fries, 1/2-inch thick. In a medium mixing bowl, whisk the egg white until very light and foamy. Add the potatoes and the seasoning to the egg whites and toss to coat evenly.

Spread the coated potatoes on the prepared baking sheet, not touching each other. Bake for 30 minutes, or until golden brown and crispy; halfway through the cooking time, with a spatula, scrape the potatoes from the baking sheet and turn over.

offseason i buy a bag in the organic frozen section... sweet potato fries...

^^^Didn't realize they had some already made in a bag. What's better I work at a very very large grocery store. I'll have to give it a look see and pick a bag or two up if we carry them. I'll keep my fingers crossed.
